Ingredients:
- 1/2 cup semolina
- 1 1/2 cups water
- 1 tsp salt
- 2 pinches of bicarbonate of soda
- 1/2 cup potatoes, boiled and diced
- 4 green chilies
- 2 tbsp coriander leaves, chopped
- 1 onion, finely sliced/chopped
- 1 tsp turmeric powder
- 3 cloves garlic
- 1/4 tsp mustard seeds
- 1/2 inch ginger
- Salt to taste
- Oil/ghee for cooking
- Coconut chutney, for serving
Instructions:

1 | To make dosais: Soak semolina in water in a bowl. |
2 | Add sour milk, bicarbonate of soda, and a pinch of salt. Blend well together with an egg beater, until an even creamy mixture results. Leave overnight in a mixing bowl. |
3 | Next morning, heat a tava (pancake pan). Pour a little oil/ghee on it. |
4 | Use 2-3 tablespoons of batter at a time. Pour it in the middle of the pan and then spread it into a circle as for pancakes. Cover with a lid for the mixture to cook. |
5 | Remove the lid and put a filling of the potato mixture in the center of the dosai. Fold over like an omelette, adding small amounts of oil/ghee to brown and prevent dosai from sticking. |
6 | Serve hot with coconut chutney. |
For Filling:
- Boil whole potatoes until done. Dice coarsely.
- Heat oil in a skillet. Add mustard seeds. When they stop spluttering, add finely sliced/chopped onions and fry until golden brown.
- Add turmeric powder, ginger, garlic, and green chilies. Fry for a few seconds.
- Add diced potatoes and salt. Blend well. Use in dosais as required.
