Ingredients:

  • 1/2 pound pork sausage
  • 1 tablespoon unsalted butter
  • 1 yellow onion, diced
  • 1/2 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • Salt and black pepper, to taste
  • 1 clove garlic, minced
  • 1 Idaho potato, peeled and diced
  • 1/4 cup fresh parsley, chopped
  • 2 cups chicken stock
  • 4 eggs
  • 1/4 cup sharp cheddar cheese, grated
  • Hot sauce, to taste
  • 1 teaspoon Emeril’s Essence (recipe follows)
  • Hot toast or tortillas, for serving

Emeril’s Essence (Optional):

  • 2 1/2 tablespoons paprika
  • 2 tablespoons salt
  • 2 tablespoons garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne pepper
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme

Instructions:

  1. Prepare Emeril’s Essence (Optional):

    • In a small bowl, combine all the spices: paprika, salt, garlic powder, black pepper, onion powder, cayenne pepper, dried oregano, and dried thyme. Mix well and set aside.
  2. Cook Sausage:

    • Heat a large frying pan over medium-high heat.
    • Add the pork sausage and cook, stirring to crumble, until browned, about 3 minutes.

    • Add the unsalted butter to the pan.
    • Once melted, add the diced onions, green bell peppers, red bell peppers, 1 teaspoon of Emeril’s Essence, hot sauce (to taste), salt, and black pepper.
    • Cook, stirring occasionally, until the vegetables are soft, about 4 minutes.
  4. Add Aromatics:

    • Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  5. Cook Potatoes:

    • Add the diced potatoes to the pan.
    • If needed, add additional butter to prevent sticking.
    • Cook, stirring occasionally, until the potatoes are lightly browned, about 4 minutes.
  6. Simmer:

    • Add the chopped parsley and chicken stock to the pan.
    • Stir well and bring the mixture to a boil.
    • Reduce the heat to low and simmer until the potatoes are tender and the stock is absorbed, about 10 minutes.
  7. Add Eggs:

    • Using a spoon, create 4 indentations in the mixture.
    • Crack an egg into each indentation.
    • Cover the pan and cook until the eggs are set, about 4 minutes.
  8. Final Touches:

    • Sprinkle the cooked eggs with the remaining 1/2 teaspoon of Emeril’s Essence and the grated cheddar cheese.
  9. Serve:
