Tumis Tahu Kecap Legit: A Flavorful Indonesian Stir-Fry

Ingredients:

  • 1 large block of tofu
  • 3 shallots
  • 3 cloves garlic
  • 1 onion
  • Bird’s eye chili, green chili, and red chili (to taste)
  • 2 thin slices of galangal
  • 3 kaffir lime leaves
  • Oyster sauce (a key ingredient)
  • Sweet soy sauce (use generously)
  • Raja rasa soy sauce (optional, a small amount)
  • Brown sugar (just a little to enhance the flavor)
  • Shrimp paste (a small amount)
  • Salt
  • Royco seasoning (or any all-purpose seasoning)

Instructions:

  1. Prepare the Tofu:

    • Cut the tofu into bite-sized pieces.
    • Heat oil in a pan and fry the tofu pieces briefly. The tofu should be lightly golden but not fully crispy; this allows the flavors to penetrate better later. Once done, remove from oil and drain.
  2. Prepare the Aromatics:

    • Slice the shallots, garlic, and onion thinly.
    • Chop the bird’s eye chili, green chili, and red chili according to your heat preference.
    • In a separate bowl, soften the shrimp paste if necessary.
  3. Stir-Fry the Aromatics:

    • Heat a pan with a bit of oil and add the sliced shallots, garlic, onion, chilies, kaffir lime leaves, and galangal slices.
    • Stir-fry until the aromatics are half-cooked and fragrant.
  4. Seasoning and Tofu:

    • Add the brown sugar and softened shrimp paste to the pan, mixing well.
    • Season with a pinch of salt and Royco seasoning to taste.
    • Add the pre-fried tofu pieces to the pan.
  5. Sauces and Cooking:

    • Pour in the sweet soy sauce and oyster sauce, and if using, add a small amount of Raja rasa soy sauce.
    • Stir well to ensure all the tofu and aromatics are coated with the sauces.
    • Cook and stir until everything is evenly mixed and the tofu is well-seasoned. Avoid adding water to keep the dish thick and flavorful.
  6. Final Touches:

    • Taste and adjust the seasoning if needed.
    • Once the tofu is nicely coated and the flavors are well-blended, remove from heat.
  7. Serve:

    • Serve hot with steamed rice or as part of a larger meal.

Enjoy the rich, savory, and slightly sweet flavors of Tumis Tahu Kecap Legit, a delicious Indonesian stir-fry that’s sure to delight your taste buds!
