- 24 wonton wrappers
- 1 cup water
- 1 tbsp butter
- 1 tbsp flour
- 2 tbsp skim milk
- 1/2 cup low-sodium chicken broth
- 1/2 cup asiago cheese, grated
- 1/2 tsp ground nutmeg
- 1/4 tsp white pepper
- 1/4 tsp ground cinnamon
Instructions:
1. Preparing the Sweet Potato Filling:
- Preheat your oven to 350ยฐF (175ยฐC).
- Place the sweet potatoes on a baking sheet and bake for 40-45 minutes, or until they are tender.
- Once the sweet potatoes are cool, peel them and mash the pulp in a bowl.
- Stir in the plain nonfat yogurt, chopped chives, and chopped sage until well combined.
2. Assembling the Ravioli:
- Lay out the wonton wrappers on a clean, dry surface.
- Spoon approximately 1 rounded teaspoon of the sweet potato mixture onto the center of each wonton wrapper.
- Lightly brush the edges of the wonton wrappers with water.
- Fold the wonton wrappers diagonally over the filling to form triangles, pressing the edges lightly to seal.
- Place the filled ravioli onto a baking sheet and cover them loosely with plastic wrap to prevent them from drying out.
3. Cooking the Ravioli:
- Bring 1 1/2 quarts of water to a boil in a large saucepan.
- Reduce the heat to medium and carefully add a few ravioli at a time to the boiling water, making sure not to overcrowd the pan.
- Cook the ravioli until they are tender, which usually takes about 9 minutes.
- Use a slotted spoon to transfer the cooked ravioli to a serving platter, draining any excess water.
4. Making the Asiago Cheese Sauce:
- In a small saucepan, melt the butter over medium heat.
- Stir in the flour and cook for about 1 minute, stirring constantly, until the mixture becomes golden brown.
- Gradually pour in the skim milk and low-sodium chicken broth, stirring continuously to avoid lumps.
- Cook the sauce until it thickens slightly, which should take around 4 minutes.
- Stir in the grated asiago cheese, ground nutmeg, white pepper, and ground cinnamon until the cheese is melted and the sauce is smooth and creamy.
5. Serving:
- Spoon about 3 tablespoons of the asiago cheese sauce onto each serving plate.
- Arrange 3 ravioli on top of the sauce on each plate.
- For an extra touch of freshness and flavor, sprinkle some additional chopped fresh sage over the ravioli as a garnish.
