Hati Sapi Bumbu Kecap (Beef Liver in Sweet Soy Sauce)

Ingredients:

  • 700 grams of beef liver, cut into pieces
  • 4 bay leaves
  • 500 ml of thin coconut milk
  • 2 tablespoons of grated palm sugar
  • Sweet soy sauce, to taste
  • Salt, to taste

Ground Spices:

  • 10 shallots
  • 6 cloves of garlic
  • 4 red chilies
  • 5 candlenuts
  • 1 tablespoon of coriander seeds
  • 1/4 piece of nutmeg
  • 3 cm of ginger
  • 2 cm of turmeric
  • 2 slices of galangal

Instructions:

  1. Sauté the Spices: Heat a small amount of oil in a pan. Add the ground spices and bay leaves, and sauté until the spices are fragrant and cooked through.
  2. Cook the Liver: Add the pieces of beef liver to the pan. Stir-fry until the liver changes color.
  3. Add Liquids and Seasonings: Pour in the thin coconut milk. Add the grated palm sugar, salt, and sweet soy sauce to the pan. Be cautious with the amount of soy sauce, as it will darken over time.
  4. Simmer: Cook the mixture, stirring occasionally, until the coconut milk has reduced and the sauce is thickened. This should result in a rich, flavorful dish where the liver is tender and infused with the aromatic spices.
