Ingredients:

  • 300 grams beef, cut into bite-sized pieces
  • 5 cloves garlic
  • 3 shallots
  • 1 teaspoon ground black pepper
  • 5 tablespoons sweet soy sauce (kecap manis)
  • 1 tablespoon soy sauce (kecap asin)
  • 1 teaspoon salt
  • 2 tablespoons tamarind water
  • 2 tablespoons shaved palm sugar
  • 1 teaspoon vinegar
  • Cooking oil, as needed
  • 1 cup water
  • For Garnish:
    • 100 grams shredded cabbage
    • 1 large tomato, cut into wedges
    • 2 shallots, sliced
    • 9 small bird’s eye chilies, sliced

Instructions:

  1. Prepare the Marinade:
    Begin by finely mincing the garlic and shallots. Combine them with the palm sugar, ground black pepper, sweet soy sauce, soy sauce, salt, tamarind water, and vinegar in a bowl. Mix thoroughly to create a rich, aromatic marinade.

  2. Marinate the Beef:
    Add the beef pieces to the marinade, ensuring each piece is well-coated. Cover the bowl and let the beef marinate in the refrigerator for at least 30 minutes to absorb all the flavors.

  3. Cook the Beef:
    Heat a generous amount of cooking oil in a pan over medium heat. Once hot, add the marinated beef along with the marinade. Cook the beef, stirring occasionally, until it starts to brown and become tender.

  4. Simmer:
    Pour in the cup of water and continue to cook the beef, allowing it to simmer until the meat is tender and the sauce has thickened slightly. Adjust the seasoning if necessary.
