Sweet Soy Sauce Catfish
Ingredients:
- 1 whole catfish
- 3 cloves garlic
- 5 shallots
- 1 piece of ginger (about 2 inches)
- Soy sauce
- Sugar
- Salt
- Oil
Instructions:

Prepare the Catfish:
- Cut the catfish into portions and wash thoroughly. Pat dry with paper towels.

Fry the Catfish:
- Heat oil in a pan over medium heat. Fry the catfish pieces until golden brown and cooked through. Remove from the pan and set aside.

Prepare the Aromatics:
- Thinly slice the garlic, shallots, and ginger.

Sauté the Aromatics:
- In the same pan, add a little oil and sauté the sliced garlic, shallots, and ginger until fragrant and golden brown.

Make the Sauce:
- Add a splash of water to the pan with the aromatics. Stir in sugar, salt, and soy sauce. Cook for a few minutes to allow the flavors to meld and the sauce to thicken slightly.

Combine and Simmer:
- Return the fried catfish to the pan. Pour additional soy sauce over the fish. Simmer until the sauce is reduced and coats the fish, about 10-15 minutes.

Serve:
- Serve the sweet soy sauce catfish hot with steamed rice. For a spicy kick, you can add sliced chilies and extra shallots, and season with black pepper and additional soy sauce.
