Sweet Soy Sauce Chicken (Ayam Kecap)
Ingredients:
- 1 kg chicken, cut into pieces as desired, washed thoroughly and pre-cooked until done
- 3 medium-sized onions, sliced
- 3 ripe tomatoes, chopped
- 3 cloves garlic, crushed and finely chopped
- 2 pieces ginger, peeled and crushed
- 3 bay leaves
- 2 stalks green onions, sliced diagonally
- Bird’s eye chili (optional, adjust to taste)
- Sweet soy sauce (kecap manis)
- Oyster sauce
- Sugar and salt
- Ground black pepper
- Royco seasoning (or a similar seasoning blend)
Steps:
- Heat a bit of oil in a pan over medium heat. Sauté the finely chopped garlic, sliced onions, crushed ginger, bay leaves, and bird’s eye chili (if using) until fragrant and the onions become translucent.
- Add the oyster sauce to the pan, stirring to combine with the aromatics. Then, add the pre-cooked chicken pieces, stirring well to coat the chicken with the mixture.
- Pour in some of the chicken broth from the initial cooking. Season with sugar, salt, and ground black pepper. Stir in the sweet soy sauce until the color of the dish turns a deep brown.
- Allow the mixture to come to a boil. Adjust the seasoning to taste. Let it simmer until the sauce slightly thickens and the flavors meld, with the liquid reducing.
- Add the chopped tomatoes and sliced green onions to the pan. Continue to cook for a few more minutes until the tomatoes are softened.
- Once everything is well combined and the sauce has thickened to your liking, remove from heat.
Serve the Ayam Kecap hot, garnished with additional green onions if desired, and enjoy this flavorful dish with your loved ones.
