Sardine-Style Cooked Tuna (Tongkol Masak Sarden)

Ingredients:

Fresh Tuna (Tongkol) 2 baskets (about 2 large fish)
Red Shallots 5 cloves
Garlic 2 cloves
Tomato 1 piece
Salt 1 tsp (or to taste)
Sweet Soy Sauce 1 tbsp
Cooking Oil 1 tbsp
Water 100 ml

Instructions:

  1. Preparation of Tuna: Begin by thoroughly cleaning the tuna, removing the central bones (spines) and any internal impurities; feel free to also discard the head if preferred.

  2. Initial Cooking: Briefly fry the tuna until slightly dry to enhance its texture, then set aside.

  3. Chopping Aromatics: Thinly slice the shallots. Crush the garlic and chop finely. Dice the tomato into small cubes.

  4. Sautéing: Heat oil in a pan, then add the shallots and garlic. Sauté until fragrant, then add the diced tomato, cooking until it softens and begins to break down.

  5. Creating the Sauce: Pour in the water, stirring well, and then add the sweet soy sauce and salt. Allow the mixture to reach a boil, and taste for seasoning.

  6. Cooking the Tuna: Gently add the fried tuna into the pan, stirring to coat with the sauce. Allow it to simmer for about 15 minutes, letting the flavors meld, and taste once more to adjust seasoning if necessary.

  7. Serving: Once the tuna is well-infused with the sauce, remove from heat and serve hot, perfect for a delightful meal!
