Orek Tempe Recipe

Ingredients

Garlic 4 cloves
Shallots 4 cloves
Red chilies 5 pieces
Palm sugar 2 pieces
Tamarind A small piece
Sweet soy sauce 3 tablespoons
Salt 2 teaspoons

Bay leaves 2 leaves
Kaffir lime leaves 2 leaves
Lemongrass 1 stalk
Galangal A small piece
Water As needed
Oil For frying and sautéing

Instructions

  1. Prepare the Tempe: Slice the tempe into long, matchstick-sized pieces.
  2. Fry the Tempe: Heat oil in a pan and fry the tempe until it becomes crispy. Remove and set aside.
  3. Sauté Aromatics: In the same oil, sauté the shallots, garlic, and red chilies until fragrant. Add the galangal, bay leaves, kaffir lime leaves, lemongrass, and palm sugar, stirring well.
  4. Combine Ingredients: Gently add the fried tempe to the pan. Pour in the tamarind water, sweet soy sauce, salt, and pepper. Mix everything thoroughly until well combined.
