Ingredients:

  • 3 yellow onions
  • 2 green peppers
  • 3 garlic powder
  • 1/4 whole tomatoes
  • 1 tomato sauce
  • 1 black pepper
  • 1 flour
  • 1 1/2 butter
  • 1 1/2 salt
  • 3 water
  • 3 round steaks

Instructions:

  1. Preheat oven to 325°F (163°C).
  2. Grease interior of a covered roasting pan or Dutch oven.
  3. Cut round steak into serving-size pieces, approximately 4-inch squares.
  4. Sprinkle both sides of steak pieces with Aldolph’s tenderizer.
  5. Place flour into a plastic zip-lock bag and place on a chopping block.
    • Alternatively, you can place half the flour on a sheet of waxed paper on top of a chopping block.
  6. Place 4 or 5 pieces of steak into the bag of flour, turning over several times to coat.
    • Use the edge of a dinner plate to pound the flour into the meat. Repeat for both sides.
  7. Remove the “pounded and floured” meat, and continue with the remaining pieces.
  8. Heat a heavy skillet until a droplet of water rolls when dropped into the hot skillet.
  9. Add Crisco, and when melted, add the butter.
  10. Quickly fry steak pieces in batches until browned on both sides.
  11. Remove to a plate until all steak has been browned.
  12. Lower heat, add onions and green peppers, along with black pepper, salt, and garlic powder.
    • Remember not to salt the steak if you’ve used Aldolph’s tenderizer, but do salt the onions and green peppers.
  13. Cook the peppers and onions until lightly browned on the edges. Be careful not to let them burn!
  14. Pour in the canned whole tomatoes and tomato sauce.
    • Break up tomatoes a bit with a spoon, leaving some in rather large pieces.
  15. When the mixture comes to a boil, remove from heat.
  16. Pour the tomato, green pepper, onion mixture into the bottom of the greased roasting pan.
  17. Place fried steak over the top.
  18. Cover and bake for 1 3/4 hours.
  19. Check the liquid halfway through baking time; add 1/4-1/2 cup water if necessary to keep the sauce from drying out.
    • You want to maintain a gravy consistency.
  20. Serve in a large “Country Style Bowl” with a side dish of buttered and creamed mashed potatoes.
  21. Enjoy with mayo coleslaw as a side dish, along with lots of bread and butter to dunk into the “gravy.”

This timeless Swiss Steak recipe embodies comfort and tradition. Its rich flavors and tender meat make it a delightful choice for any occasion. Whether you’re cooking for family or entertaining guests, this dish is sure to impress!
