Teflon-Grilled Kampung Chicken Recipe

Ingredients
- 1 kg kampung chicken, cut into small pieces for tenderness
For the Spice Paste:
- 4 cloves garlic
- 4 shallots
- 3 candlenuts (kemiri)
- 1 thumb-sized piece of ginger
- 1 thumb-sized piece of turmeric
- 2 tomatoes
- 4 bird’s eye chilies or green chilies (adjust according to taste)
- 3 kaffir lime leaves
- 2 stalks lemongrass, bruised
- 2 tablespoons sweet soy sauce
- 2 cups water
- 1 sachet flavor enhancer
- Palm sugar and salt, to taste

Pre-cook the Chicken:
- In a large pot, bring water to a boil. Add the chicken pieces and simmer for approximately 30 minutes, until tender. Remove the chicken from the pot and set aside.

Prepare the Spice Paste:
- Using a blender or food processor, combine the garlic, shallots, candlenuts, ginger, turmeric, and tomatoes. Blend into a smooth paste.

Cook the Spice Paste:
- Heat a little oil in a pan over medium heat. Add the spice paste and sauté until fragrant and the paste darkens slightly.
- Add the kaffir lime leaves and bruised lemongrass to the pan, and cook until the oil separates from the paste.

Simmer the Chicken:
- Pour in 2 cups of water, then add palm sugar, salt, and half of the flavor enhancer. Stir well.
- Add the pre-cooked chicken pieces to the pan, ensuring they are coated with the spice paste. Cover and simmer until the sauce reduces slightly and thickens, about 10 minutes.
- Stir occasionally and adjust seasoning with more palm sugar or salt, if needed. Remove from heat when the sauce is thick and flavorful.

- Heat a Teflon pan over medium heat. Lightly grease the pan with margarine.
- Place the chicken pieces in the pan and grill, turning occasionally, until the chicken is nicely browned and has a slight char. Brush with any remaining spice paste while grilling for added flavor.
