Title: Spicy Beef Skin Stir-Fry

Ingredients:

  • 1/4 lb beef skin
  • 4 pieces tofu, cut into cubes
  • 3 large red chilies
  • 2 shallots
  • 2 cloves garlic
  • 1 thumb-sized piece of galangal
  • 1/2 thumb-sized piece of ginger
  • 2-3 bay leaves
  • 3 tablespoons Saori Teriyaki Sauce
  • 2 tablespoons sweet soy sauce (Bango)
  • Seasoning powder (Royco Beef)
  • Salt, to taste
  • Cooking oil
  • Water

Instructions:

  1. Prepare the Beef Skin: Begin by cleaning the beef skin thoroughly. Boil water in a pot and cook the beef skin until tender. This process can take some time, so ensure the beef skin becomes soft and easy to cut.

  2. Fry the Tofu: While waiting for the beef skin to cook, cut the tofu into small cubes. Heat some oil in a pan and fry the tofu pieces until golden brown. Set aside.

  3. Prepare the Aromatics: Thinly slice the shallots and garlic. Slice the red chilies as well. For the galangal and ginger, crush them slightly to release their flavors.

  4. Sautรฉ the Aromatics: In a new pan, heat some oil over medium heat. Add the sliced shallots, garlic, and red chilies to the pan. Sautรฉ until fragrant and the shallots become translucent.

  5. Add Galangal and Ginger: Add the galangal, ginger, and bay leaves to the pan. Stir well to combine.

  6. Combine Ingredients: Once the aromatics are ready, add the cooked beef skin to the pan. Stir in the Saori Teriyaki Sauce and sweet soy sauce.

  7. Season the Dish: Pour in enough water to cover the ingredients. Season with salt and seasoning powder according to your taste.

  8. Simmer: Allow the dish to simmer until the sauce reduces slightly and the flavors meld together. Stir occasionally to ensure even cooking and that the sauce coats all ingredients well.

  9. Final Touches: Taste and adjust seasoning if necessary. Once the sauce has thickened and the flavors are well absorbed, remove from heat.
