Sapi Teriyaki: A Savory Beef Delight

Ingredients:

  • 250 grams of beef (thinly sliced)
  • 1 tablespoon teriyaki sauce
  • 1 tablespoon tapioca flour
  • 2 cloves garlic (minced)
  • 1 onion (sliced)
  • 400 grams water calabash (also known as winter melon or ash gourd, cut into chunks)
  • 1 stalk green onion (sliced diagonally)
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 1 tablespoon rice wine (angciu)
  • Sugar, salt, and pepper to taste
  • A pinch of ginger (crushed)

Instructions:

  1. Marinate the Beef:
Begin by marinating the thinly sliced beef in a mixture of teriyaki sauce and tapioca flour. Allow it to marinate for approximately 15 minutes, ensuring the beef is well-coated with the marinade.

  2. Prepare the Aromatics:
Heat a generous splash of oil in a pan over medium heat. Add the minced garlic, crushed ginger, and sliced green onion to the pan. Sauté them until they release their fragrant aroma, taking care not to burn them.

  3. Cook the Beef:
Add the marinated beef to the pan. Stir-fry the beef until it changes color and begins to brown slightly. This will lock in the flavors and create a delicious base for the dish.

  4. Simmer with Vegetables:
Pour in enough water to cover the ingredients, then bring the mixture to a boil. Once boiling, reduce the heat to a simmer and cover the pan. Add the chunks of water calabash and season with sweet soy sauce, rice wine, sugar, salt, and pepper. Stir well to combine all the ingredients.

  5. Cook Until Tender:
Allow the mixture to simmer gently, covered, until the water calabash becomes tender. This should take about 10-15 minutes. Stir occasionally and check the seasoning, adjusting as necessary.

  6. Finish and Serve:
Once the water calabash is tender and the flavors are well combined, add the remaining sliced green onion. Give the dish a final stir to incorporate the green onion. Remove from heat and transfer to a serving dish.

  7. Enjoy:
Serve the Sapi Teriyaki hot as a delightful main course, paired with steamed rice or noodles.

This recipe for Sapi Teriyaki brings together the rich umami of teriyaki sauce with the subtle sweetness of water calabash, creating a satisfying and flavorful meal that is both comforting and delicious.
