Ingredients:
- 1 to 1 1/2 pounds lean ground beef
- 2 to 3 onions
- 1 garlic clove
- 1 green bell pepper
- 1 can diced tomatoes
- 1 can Rotel Tomatoes
- 1 cup long-grain rice
- 2 teaspoons chili powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions:
- Lightly grease a 2-quart casserole dish.
- In a large skillet over medium-high heat, brown the ground beef and onions until the onions are translucent.
- Once the onions are translucent, add the minced garlic and diced green bell pepper to the skillet. Cook until the green pepper is softened.
- Remove the skillet from heat and stir in the diced tomatoes, Rotel tomatoes, long-grain rice, chili powder, salt, and pepper until well combined.
- Transfer the mixture to the prepared casserole dish and cover with a lid or aluminum foil.
- Bake the Texas Hash at 350°F (175°C) for 45 minutes.
- After 45 minutes, remove the cover and continue baking for an additional 15 minutes, allowing the top to get slightly crispy.
