Ingredients:

1 lb Lean ground beef
1/2 tsp Salt
1 Onion
1 can Black olives
1 can Tomato sauce
2 tbsp Tomato paste
1 cup Water
1 tbsp Chili powder
1 tsp Garlic powder
1/2 tsp Salt (for seasoning)
2 packs Tortillas
2 cups Shredded cheese

Instructions:

  1. Brown ground beef in a skillet over medium heat, stirring until crumbly; then, drain any excess fat.
  2. Add 1/2 tsp of salt, 1 cup of shredded cheese, chopped onion, and sliced black olives to the cooked ground beef; mix well until combined.
  3. In a saucepan, combine tomato sauce, tomato paste, water, chili powder, garlic powder, and the additional 1/2 tsp of salt; heat the mixture until it starts simmering.
  4. Dip tortillas into the simmering tomato sauce to soften them.
  5. Place a heaping tablespoon of the ground beef mixture onto each tortilla, then roll the tortillas to enclose the filling, and place them seam side down in a 9×13 inch baking pan.
  6. Pour 1 cup of the tomato mixture over the filled tortillas in the baking pan.
  7. Bake the enchiladas at 350 degrees F (175 degrees C) for 10 minutes.
  8. After 10 minutes, top the enchiladas with 1 cup of shredded cheese and bake for an additional 5 minutes, or until heated through and the cheese is melted and bubbly.
  9. Serve the enchiladas with the remaining tomato sauce on the side for dipping or drizzling.
