Instructions:

  1. Prepare Giblets: Remove giblets from the turkey.
  2. Simmer Giblets: Place giblets in a saucepan and season with salt, pepper, sage, celery, and onion.
  3. Add Water: Cover the giblets with water.
  4. Simmer: Bring to a boil, then reduce heat and simmer covered for 2-3 hours while the turkey cooks.
  5. Blend Giblets: Once the meat starts to fall away from the neck bones, strain the liquid into a blender.
  6. Add Liver and Gizzard: Chop the liver and gizzard, then add them to the blender.
  7. Add Neck Meat: Pick meat from neck bones and add it to the blender.
  8. Blend: Puree the mixture until liquefied, pausing occasionally.
  9. Incorporate Flour: Gradually add seasoned flour to the blender, blending off and on until incorporated.
  10. Prepare Pan: After removing the turkey from the roaster, pour off excess fat, leaving brown bits and juices in the pan.
