Sapo Tahu Recipe
Ingredients:

For the Dish:
- 2 blocks of tofu
- 2 carrots
- 2 bunches of bok choy
For the Seasoning:
- 3 cloves garlic
- 2 shallots
- 5 small chili peppers
- 1 tablespoon oyster sauce
- 1 teaspoon soy sauce
- 1 teaspoon sugar
- Salt to taste
- Pepper to taste

Prepare the Tofu: Cut the tofu into bite-sized pieces. Heat oil in a pan over medium heat and fry the tofu pieces until they turn golden brown. Remove from the pan and set aside.

Prepare the Vegetables: Slice the carrots into thin rounds and chop the bok choy into bite-sized pieces. Rinse them thoroughly under cold water.

Sauté Aromatics: Slice the garlic and shallots thinly. Remove the stems from the chili peppers and slice them finely. In the same pan used for frying tofu, add a bit more oil if needed and sauté the garlic, shallots, and chili peppers until they release their aroma and become fragrant.

Combine Ingredients: Gently add the fried tofu and chopped bok choy to the pan. Stir-fry briefly until the bok choy is wilted and the tofu is heated through. Allow the sauce to reduce slightly, adjusting seasoning to taste.
