Sapo Tahu Brokoli: A Delightful Chinese-Inspired Tofu and Broccoli Stir-Fry

Ingredients:

  • 1 package of egg tofu
  • 1 head of broccoli
  • 2 carrots, thinly sliced
  • 1/5 head of cabbage (preferably napa cabbage for more flavor)
  • 1 large red chili pepper
  • 4 beef meatballs
  • 4 fish meatballs (optional)
  • 2 cloves of garlic
  • 1/2 onion
  • 1 piece of ginger (crushed)
  • 1 sachet of oyster sauce (Saori brand)
  • 1 tablespoon soy sauce
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon cornstarch
  • 1 cup water
  • Vegetable oil

Instructions:

  1. Prepare the Vegetables and Ingredients:

    • Wash all the vegetables and other ingredients thoroughly. Soak the broccoli in hot water for about 30 seconds to blanch it slightly, then drain and set aside.
    • Finely chop the garlic, slice the onion, and cut the carrots and red chili pepper into thin pieces. Slice the beef and fish meatballs if using.
  2. Cook the Tofu:

    • Cut the egg tofu into bite-sized pieces and fry them in hot oil until they are golden and crispy. Once cooked, remove them from the pan and drain on paper towels.
  3. Sauté Aromatics:

    • In a pan, heat a little vegetable oil over medium heat. Add the chopped garlic, sliced onion, and crushed ginger. Sauté until they become fragrant and the onions are translucent.
  4. Stir-Fry the Vegetables:

    • Add the sliced carrots to the pan and stir-fry for a minute. Pour in 1 cup of water and bring to a boil. Once the water starts boiling and the carrots begin to soften, add the oyster sauce, soy sauce, granulated sugar, salt, and black pepper. Adjust the seasoning according to your taste.
  5. Combine Ingredients:

    • Add the remaining ingredients: cabbage, red chili pepper, and broccoli. Stir to combine everything well. Let it cook for about 1 minute to allow the flavors to meld.
  6. Thicken the Sauce:

    • In a small bowl, mix the cornstarch with a bit of water to create a slurry. Pour the slurry into the pan and stir until the sauce thickens to your desired consistency.
  7. Final Touches:

    • Gently fold in the fried tofu pieces and let them heat through in the sauce. Once everything is well combined and heated, remove from heat.
  8. Serve:

    • Transfer the Sapo Tahu Brokoli to a serving dish and serve hot. This dish pairs wonderfully with steamed rice or noodles.
