Sapo Tahu
Ingredients
- 1 package silk tofu or egg tofu, cut into pieces, coated with flour & fried
- 100 grams peeled shrimp
- 5 fish balls, sliced
- 1 large carrot, sliced
- 1 bunch green mustard, chopped
- 100 grams oyster mushrooms, soaked in hot water & drained
- 1 stalk scallion, sliced
- 1 clove garlic, crushed
- 1 clove shallot, sliced
- 1 tablespoon oyster sauce
- A dash of sesame oil
- Sugar, salt, pepper, and chicken broth powder to taste
- A little water
- A little oil for sautéing
Instructions
- Sauté Aromatics: Heat a little oil in a pan over medium heat. Add the crushed garlic and sliced shallot, sauté until fragrant and soft.
- Add Seafood and Carrots: Stir in the shrimp, fish ball slices, and carrot pieces. Cook until the carrots start to soften.
- Combine Vegetables: Add the chopped green mustard and oyster mushrooms. Pour in the oyster sauce and a dash of sesame oil. Add a little water to create a bit of sauce.
- Season to Taste: Sprinkle in sugar, salt, pepper, and chicken broth powder. Taste and adjust the seasoning as needed.
- Finish with Tofu and Scallions: Just before turning off the heat, add the fried tofu pieces and sliced scallions. Gently mix to combine.
- Serve: Turn off the heat, remove from the pan, and serve hot. Enjoy your delicious Sapo Tahu!
Cooking Tips
- For a vegetarian version, you can omit the shrimp and fish balls and add more varieties of mushrooms or other favorite vegetables.
- Be gentle when mixing in the tofu to avoid breaking the pieces.
- Adjust the amount of water according to your preference for a thicker or thinner sauce.
