Sate Tahu & Tempe (Tofu and Tempeh Skewers)

Ingredients:

White tofu 2 pieces
Tempeh 1/3 large block
Galangal 1 piece (thumb-sized)
Bay leaves 1 leaf
Sweet soy sauce 2 tablespoons
Salt To taste
Seasoning (optional) To taste
Granulated sugar To taste
Spice Paste:
Garlic 2 cloves
Shallots 4 pieces
Candlenuts 2 pieces
Palm sugar To taste
Black pepper 1 teaspoon
Coriander 1/2 teaspoon

Instructions:

  1. Begin by cutting the tofu and tempeh into your desired shapes, allowing for optimal marination and grilling.
  2. In a saucepan, combine the tofu, tempeh, bay leaves, galangal, and sweet soy sauce, adding enough water to submerge the ingredients.
  3. Cook over medium heat, seasoning with salt, granulated sugar, and optional seasoning. Adjust the taste as needed, cooking until the liquid reduces and the flavors meld.
  4. Assemble the tofu and tempeh onto skewers or bamboo sticks, making them easy to handle while grilling.
  5. Heat a non-stick frying pan over medium heat and add a splash of oil. Grill the skewers, basting with leftover marinade, and drizzle with sweet soy sauce until they reach a slightly crispy texture.
  6. Remember to turn the skewers occasionally and apply sauce to the other side for even flavor.
