While most mac and cheese recipes are laden with cheese and carbs, this low carb version, lovingly dubbed “Mactofuni & Cheese,” is a healthier twist that doesn’t compromise on flavor. It’s perfect for those following a low-carb lifestyle or anyone looking for a tasty pasta substitute. With its creamy texture and satisfying taste, this dish is sure to become a new family favorite.
Ingredients:
- 1/4 cup half-and-half
- 3/4 cup water
- 2 teaspoons curry powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/8 teaspoon dried onion
- 3 – 4 ounces extra firm tofu, cubed
- 2 cups grated cheddar cheese
- 1/4 cup yogurt
- 2 teaspoons butter
- 4 – 5 tablespoons grated Parmesan cheese
- Optional: crunched pork rinds
Instructions:

Prepare the Sauce:
In a mixing bowl, combine the half-and-half, water, dried onion, curry powder, garlic powder, salt, and black pepper. Set aside to allow the onion to absorb some of the liquid. -
Preheat the Oven:
Preheat your oven to 350°F (175°C). -
Prepare the Tofu and Cheese Mixture:
In a large bowl, gently toss together the cubed tofu, grated cheddar cheese, and yogurt until well combined. -
Assemble the Dish:
Transfer the tofu and cheese mixture into a large baking dish, making sure to spread it out evenly. -
Add the Sauce:
Dot the top of the tofu and cheese mixture with teaspoons of butter. Then, pour the prepared half-and-half and spice mixture over the tofu and cheese. -
Top with Parmesan and Pork Rinds (Optional):
Sprinkle the grated Parmesan cheese over the top of the dish. If desired, add crunched pork rinds for extra crunch and flavor. -
Bake:
Cover the baking dish with a glass lid and bake in the preheated oven for about 40 minutes, or until the dish is heated through and bubbly. For a crispy topping, remove the lid during the last 5 minutes of baking. -
Serve:
Once baked, remove the dish from the oven and let it cool slightly before serving. Enjoy this delightful low carb twist on classic mac and cheese!
