Savory Tofu Soup with Bean Sprouts and Mustard Greens

Simple Tofu Soup

Ingredients:

  • 4 large blocks of white tofu
  • 1 package bean sprouts
  • 3 bunches of Chinese mustard greens
  • 3 cloves garlic
  • 3 shallots
  • Salt, to taste
  • Pepper, to taste
  • Chicken bouillon powder, to taste
  • Water
  • Fried shallots, for garnish

Instructions:

  1. Begin by cutting the tofu into small cubes. Set aside.

  2. Thinly slice the garlic and shallots.

  3. Bring a pot of water to a boil.

  4. Once boiling, add the sliced garlic and shallots to the water.

  5. Next, add the bean sprouts and Chinese mustard greens. Cook until the greens are tender and the bean sprouts are softened.

  6. Gently add the tofu cubes to the pot.

  7. Season the soup with salt, pepper, and chicken bouillon powder to taste. Stir well and adjust seasoning as needed.

  8. Allow the soup to cook until the tofu is heated through and the flavors have melded together.

  9. Serve the soup hot, garnished with a sprinkle of fried shallots and a side of spicy soy sauce if desired.
