Simple Stir-Fried Tofu with Bean Sprouts (Tumis Tahu Toge Simpel)

Ingredients

Firm white tofu 5 pieces
Bean sprouts A handful, rinsed
Spices
Red shallots 6, thinly sliced
Garlic 4 cloves, thinly sliced
Red chili To taste
Galangal 3 cm, rinsed and crushed
Bay leaf 1 leaf, rinsed
Salt To taste
Sugar To taste
Oyster sauce 1 sachet (optional)
Ground pepper To taste
Water As needed

Instructions

  1. In a pan, heat some oil and sauté the red shallots, garlic, red chili, bay leaf, and galangal until fragrant and softened.
  2. Add the fried tofu and stir to combine evenly.
  3. Introduce the bean sprouts and stir until mixed; add a splash of water if needed.
  4. Season with sugar, salt, ground pepper, and oyster sauce. Stir well and taste for seasoning.
  5. Cook until the liquid reduces and thickens. Finish by sprinkling fried shallots on top.
