Instructions:

  1. Prepare Tofu Shell: Mash firm tofu thoroughly, ensuring a lump-free consistency.
  2. Set Up Colander: Line a 12″ colander with wet cheesecloth, overlapping the sides. Place mashed tofu inside, cover with the overlapping cheesecloth, a plate, and a 5-pound weight. Refrigerate for 2-3 hours.
  3. Start Stuffing: In a pan, sauté onions, celery, and mushrooms in 2 tbsp sesame oil. Once soft, add garlic and the rest of the stuffing ingredients (except stuffing). Cook for 5 minutes.
  4. Add Herb Stuffing: Mix in Pepperidge Farm Herb Stuffing until well combined.
  5. Prepare Tofu “Turkey”: Remove tofu from the colander, hollow out to create a shell, leaving a 1-inch border. Place the stuffing inside, cover with the remaining tofu, and press down firmly.
  6. Shape and Prepare: Turn the stuffed tofu onto a greased baking sheet, flat side down. Gently press the sides for an oval shape. Optional: create “drumsticks” from one pound of tofu and place on each side.
  7. Basting and Baking: Mix up the basting mixture and baste the tofu “turkey” with half of it. Cover with foil and bake at 400 degrees for about 1 hour.
  8. Final Touch: Remove foil, baste with the remaining mixture (except a few tablespoons), and return to the oven for an additional hour or until the “turkey” is golden.
  9. Presentation: Carefully transfer the tofu “turkey” to a large plate using at least two large spatulas.
  10. Serve: Accompany with your choice of gravy and cranberry sauce. 🍽️
