Preheat oven to 425°F (220°C).

Unroll the dough, separating it into strips. On a flat surface, coil one strip of dough around itself in a spiral pattern. Add the second strip of dough to the end of the first strip, pinching the ends to seal. Continue coiling the remaining dough. Let it rest for 10 minutes.

Roll the dough into a 12-inch circle. Fit it into the bottom and up the sides of a 9-inch round removable bottom tart pan coated with cooking spray.

Cover the dough with foil and arrange pie weights or dried beans on top of the foil. Bake at 425°F (220°C) for 15 minutes, then remove the weights and foil. Bake for an additional 5 minutes or until the edges are lightly browned.

Core and slice the tomatoes into 1/4-inch thick slices. Sprinkle the slices with salt and place them, salt-side down, on several layers of paper towel. Cover with additional paper towels and let them stand for 10 minutes, pressing down occasionally.

Spread the cheese mixture over the crust. Arrange the tomato slices over the cheese mixture and brush with olive oil.
