Description

A delightful recipe to make use of those ripe, end-of-the-season tomatoes. When I first tried this, I was pleasantly surprised by how the bread crumbs transformed into a flavorful sauce, soaking up all the delicious juices from the tomatoes. This recipe is adapted from “Too Many Tomatoes” by Burrows and Myers.

Ingredients

Quantity Ingredient
8 Tomatoes
1 Pinch of Salt
1/8 Teaspoon Pepper
1 Teaspoon Sugar
1/2 Teaspoon Dry Mustard
2 Tablespoons Butter
2 Onions
2 1/2 Cups Bread Crumbs
6 Tablespoons Parmesan Cheese, grated

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) to get it nice and cozy for our delicious bake.

  2. Prepare the tomato mixture by slicing the tomatoes and placing them in a bowl. Season with a pinch of salt, 1/8 teaspoon of pepper, 1 teaspoon of sugar, and 1/2 teaspoon of dry mustard. Gently mix everything together until the tomatoes are well coated. Set this bowl aside to let the flavors meld.

  3. Sautรฉ the onions: In a skillet over medium heat, melt 2 tablespoons of butter. Add the sliced onions and sautรฉ until they are soft and translucent, releasing their sweet aroma. This should take about 5-7 minutes. Once done, set the onions aside.

  4. Prepare the bread crumb mixture: In a separate bowl, combine the bread crumbs with the melted butter. Stir until the crumbs are evenly coated and have a lovely, buttery texture.

  5. Layer it up: Take a buttered 1 1/2-quart casserole dish and begin layering. Start with a layer of the seasoned tomatoes, followed by a layer of the sautรฉed onions, and then a generous sprinkle of the buttered bread crumbs. Repeat these layers until you’ve used up all your ingredients, ending with a final layer of tomatoes on top.

  6. Bake the magic: Pop the casserole dish into the preheated oven and let it work its magic for 25 minutes. The kitchen will soon be filled with the tantalizing aroma of bubbling tomatoes and savory onions.

  7. Cheesy Finish: After 25 minutes, take out the casserole and sprinkle the grated Parmesan cheese over the top. Return it to the oven and let it bake for an additional 5 minutes, or until the cheese is melted and golden brown.

  8. Serve & Enjoy: Once beautifully golden and bubbling, your Fresh Tomato Bake is ready to be enjoyed! Scoop generous servings onto plates and savor the flavors of summer in every bite. This dish pairs wonderfully with a crisp green salad or some crusty bread to mop up those delicious juices.

This Fresh Tomato Bake is a true celebration of the flavors of the season, bringing together the sweetness of ripe tomatoes, the savory richness of onions, and the comforting crunch of buttery breadcrumbs. Whether you’re serving it up for a weekend brunch, a cozy family dinner, or just as a delightful way to use up those garden tomatoes, this recipe is sure to become a favorite. ๐Ÿ…โœจ Enjoy!
