Ingredients:

  • 2-3 lb roast (or round steak or stew meat)
  • Flour, for coating
  • Salt and pepper
  • 2 tbsp oil
  • 1 large onion, sliced
  • 1 can (14.5 oz) tomatoes with juice
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions:

  1. Coat roast with flour, salt, & pepper.

    • In a bowl, mix flour with salt and pepper. Coat the roast evenly with this mixture.
  2. Brown well in oil, about 10 minutes on each side.

    • Heat oil in a large, heavy-bottomed pot over medium-high heat. Add the coated roast and brown it well on all sides, about 10 minutes per side. This step helps to seal in the flavors.
  3. During last 5 minutes, add sliced onions.

    • When the roast is almost done browning, add the sliced onions to the pot. Cook them until they are softened and slightly caramelized, about 5 minutes.
  4. Add tomatoes, thyme, and bay leaf.

    • Pour in the canned tomatoes with their juice. Add the dried thyme and bay leaf to the pot. Stir everything together gently.
  5. Crush tomatoes with cooking spoon.

    • Use the back of a cooking spoon to crush the tomatoes slightly. This will release their juices and enhance the flavor of the sauce.
  6. Bring to boil, lower heat and simmer covered for 2 hours.

    • Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot with a lid, and simmer gently for 2 hours. Check occasionally to ensure it’s simmering gently and adjust heat if needed.
  7. Serve and enjoy!

    • Once the pot roast is tender and the flavors have melded together, it’s ready to serve. This comforting dish pairs perfectly with mashed potatoes or your favorite side dish.

Recipe Notes:

  • Variations: Feel free to use round steak or stew meat instead of a traditional roast. Adjust cooking times slightly if using different cuts.

  • Make Ahead: This dish can be made ahead of time and reheated gently on the stove. The flavors often deepen when allowed to sit overnight.

  • Serving Suggestions: Besides mashed potatoes, consider serving this pot roast with steamed vegetables, rice, or crusty bread to soak up the delicious sauce.

  • Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days or freeze for longer storage. Reheat gently on the stove or in the microwave until heated through.

This Easy Pot Roast recipe is a classic comfort food that’s perfect for cozy family dinners or when you want a hearty meal that’s simple to prepare yet full of flavor. The tender meat, savory sauce, and aromatic herbs make it a favorite for any occasion. Enjoy making and sharing this dish with loved ones! 🍲
