Ingredients:

  • 15 plum tomatoes
  • 2 tbsp extra virgin olive oil
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2/3 cup grated parmesan cheese
  • 1/3 cup all-purpose flour
  • 1/4 cup butter

Instructions:

  1. Preheat Oven: Preheat your oven to 350ยฐF (175ยฐC).
  2. Prepare Tomatoes: Core and cut the tomatoes in half lengthwise.
  3. Arrange Tomatoes: Arrange the tomato halves, cut sides up and without touching, on a large foil-lined rimmed baking sheet.
  4. Season Tomatoes: Brush the tomatoes with olive oil and sprinkle them with thyme, rosemary, salt, and pepper.
  5. Roast Tomatoes: Roast the tomatoes in the preheated oven until the tops are shriveled and the bottoms are browned, about 2 hours.
  6. Assemble Crumble: Once roasted, arrange the tomatoes, overlapping, in an 8-inch square glass baking dish. (Tip: You can make this ahead by letting the tomatoes cool, covering, and refrigerating for up to 24 hours. Add 20 minutes to the cooking time if refrigerated.)
  7. Prepare Crumble Topping: In a bowl, stir together the breadcrumbs, grated parmesan cheese, and flour. Drizzle with melted butter and toss until crumbly.
  8. Top Tomatoes: Sprinkle the crumbly mixture evenly over the tomatoes in the baking dish.
  9. Bake: Bake the tomato crumble in a preheated 400ยฐF (200ยฐC) oven until the topping is golden and bubbly, about 25 minutes.
  10. Serve: Once baked to perfection, remove the tomato crumble from the oven and let it cool slightly before serving.
