Tongkol Pampis: A Flavorful Indonesian Delight

Spice Paste (Bumbu Halus):

  • 17 shallots (bawang merah)
  • 8 garlic cloves (bawang putih)
  • 20 bird’s eye chilies (cabe rawit)
  • 5 curly chilies (cabe keriting)
  • 1 piece of turmeric (kunyit), about 1-inch
  • 1 slice of ginger (jahe)

Instructions

  1. Prepare the Fish:
    Start by cleaning the ikan tongkol thoroughly under running water. Once cleaned, marinate the fish with lime juice and a sprinkle of salt, letting it sit for a few minutes. After marinating, steam the fish until cooked through. Once cooled, shred the fish into bite-sized pieces.

  2. Sauté the Spice Paste:
    In a large skillet, heat a splash of oil over medium heat. Add the finely blended spice paste (bumbu halus) and sauté until fragrant, allowing the beautiful aromas to fill your kitchen.

  3. Add Aromatics:
