Pinada Tongkol Recipe

For the Dough:
- 10 pieces of tuna (tongkol) – 1 kg
- 2 teaspoons instant yeast
- 1 egg
- 2 tablespoons butter
- 2 boiled potatoes, mashed
- Warm water, as needed
- Salt, to taste
- Sugar, to taste

- 3 shallots
- 2 garlic cloves
- 1 red chili
- Bay leaves
- A thumb-sized piece of turmeric
- Water, as needed
- Salt, to taste
- Sugar, to taste
- Sliced green onions

Prepare the Dough:
- In a mixing bowl, combine the flour with sugar and salt.
- Add the egg, melted butter, and mashed potatoes to the flour mixture.
- Gradually add warm water, kneading until the dough is smooth and elastic. If needed, you can knead the dough more vigorously to help it rise.
- Cover the bowl with a clean cloth and let the dough rise in a warm place until it has doubled in size.

Shape the Dough:
- Once the dough has risen, punch it down to release the air.
- Take portions of the dough, roll them into balls, and flatten them out using a rolling pin or a pastry cutter.

Prepare the Tuna Filling:
- Shred the tuna and sauté it with the ground spices (shallots, garlic, red chili, and turmeric) and bay leaves.
- Add enough water to create a moist filling.
