Pinada Tongkol Recipe
Ingredients:

For the Dough: Related Articles- 10 pieces of tuna (tongkol) – 1 kg
- 2 teaspoons instant yeast
- 1 egg
- 2 tablespoons butter
- 2 boiled potatoes, mashed
- Warm water, as needed
- Salt, to taste
- Sugar, to taste
 
- 
For the Tuna Filling: - 3 shallots
- 2 garlic cloves
- 1 red chili
- Bay leaves
- A thumb-sized piece of turmeric
- Water, as needed
- Salt, to taste
- Sugar, to taste
- Sliced green onions
 
Instructions:
- 
Prepare the Dough: - In a mixing bowl, combine the flour with sugar and salt.
- Add the egg, melted butter, and mashed potatoes to the flour mixture.
- Gradually add warm water, kneading until the dough is smooth and elastic. If needed, you can knead the dough more vigorously to help it rise.
- Cover the bowl with a clean cloth and let the dough rise in a warm place until it has doubled in size.

Shape the Dough: - Once the dough has risen, punch it down to release the air.
- Take portions of the dough, roll them into balls, and flatten them out using a rolling pin or a pastry cutter.
 
- 
Prepare the Tuna Filling: - Shred the tuna and sauté it with the ground spices (shallots, garlic, red chili, and turmeric) and bay leaves.
- Add enough water to create a moist filling.
- Season with salt and sugar to taste.
- Stir in sliced green onions and cook until well combined.

Assemble the Pinada Tongkol: - Place a small amount of the tuna filling onto each flattened piece of dough.
- Fold the dough over to cover the filling and seal the edges, shaping them like pasties or empanadas.

Cook the Pinada Tongkol: - Heat oil in a pan over low heat.
- Fry the filled dough pieces until they are golden brown and crisp, turning them as needed to ensure even cooking.

Serve: - Serve the Pinada Tongkol hot with your favorite dipping sauce. They are delicious as a snack or part of a meal.
