Instructions:
For Vushka Dumplings:
- Combine flour and salt in a mixing bowl.
- Add egg yolk, evaporated milk, and oil. Mix until well combined.
- Allow the dough to rest for 5 minutes.
- Knead the dough for 5 minutes until smooth, then form it into a ball.
- Cover the dough and let it rest for 15 minutes.
- On a floured surface, roll out a third of the dough into a thin rectangle, about 1/8 inch thick.
- Cut the dough into 1-1/2 inch squares.
- Place a teaspoon of mushroom filling in the center of each square.
- Fold the dough diagonally to form a triangle, pressing the edges to seal.
- Pinch together the two bottom corners to ensure the filling stays inside.
- Repeat with the remaining dough and filling.
- Bring a large pot of water to a rapid boil.
- Drop the dumplings into the boiling water and cook for 1 minute, or until they float to the top.
- Remove the cooked dumplings with a slotted spoon and drain on a plate lined with paper towels.
- Repeat until all dumplings are cooked.
- Serve the dumplings hot with mushroom gravy.
For Mushroom Filling:
- In a saucepan, bring dried mushrooms to a boil in enough water to cover them.
- Simmer the mushrooms until tender, about 1-1/2 hours, adding water as needed.
- Once tender, remove the mushrooms from the liquid and set aside to cool.
- In a separate skillet, heat oil or butter over medium heat.
- Add chopped onions and cook until wilted.
- Add chopped fresh mushrooms to the skillet and cook until softened.
- Chop the rehydrated dried mushrooms finely and add them to the skillet.
- Cook the mushroom mixture until dry, then season with salt, pepper, and lemon juice.
- Stir in bread crumbs and remove from heat.
- Allow the mixture to cool while stirring occasionally to release steam.
For Mushroom Gravy:
- In a saucepan, heat stock until boiling.
- Add 1 cup of the prepared mushroom mixture and bring to a boil.
- Stir in cream and heat through.
- Season the gravy to taste with salt and pepper.
- For a thicker consistency, mix cornstarch with a little cream to form a slurry.
- Gradually add the slurry to the hot gravy, stirring constantly until thickened.
- Serve the mushroom gravy hot over the cooked vushka dumplings.
