Savory Vegetable and Pancetta Snails (Chiocciole Salate Verdure e Pancetta)

Extra virgin olive oil 3 tablespoons
Fine salt 10 g
Sugar 1 teaspoon
Red and yellow bell peppers 1/2 of each (cut into strips)
Zucchini 100 g (sliced thinly)
Salt to taste
Olive oil 1 tablespoon
Caciocavallo cheese 250 g (sliced)
Pancetta 125 g (diced)
