Ingredients:
- 1/2 kg (about 1 lb) sukiyaki beef (Wagyu slices recommended)
- Vegetable oil, as needed
- 1 large onion, thinly sliced
- 2 teaspoons sugar
- 2 tablespoons apple cider vinegar
- 2 tablespoons soy sauce
- 240 ml (1 cup) fish stock (can substitute with chicken or beef broth)
- 2 eggs
- 2 stalks green onions, sliced
- Red chili slices, for garnish (optional)
- Cooked rice, for serving

Prepare the Ingredients: Begin by heating a small amount of vegetable oil in a large skillet over medium heat. Once hot, add the thinly sliced onion and sauté until it becomes translucent and aromatic, about 5 minutes.

Cook the Beef: Add the sliced sukiyaki beef to the skillet, along with the sugar. Stir-fry until the beef is browned and cooked through. Next, pour in the apple cider vinegar and soy sauce, stirring well to combine. Add the fish stock (or your chosen broth) and bring the mixture to a boil. Reduce the heat and let it simmer until the sauce has thickened and reduced, about 10-15 minutes. Taste and adjust seasoning with additional soy sauce if necessary.

Fry the Eggs: While the beef is cooking, heat another skillet over medium heat and fry the eggs to your desired level of doneness. Softly cooked eggs with a runny yolk work particularly well with this dish.
