Sautéed Water Spinach with Sardines and Fried Eggs
Ingredients:
- 1 bunch water spinach (kangkung), cleaned and chopped
- 1 small can of sardines (alternatively, you can use tuna or mackerel)
- 2 hard-boiled eggs, peeled and lightly fried
- 10 small red chilies, thinly sliced
- 3 cloves garlic, finely chopped
- 1 teaspoon sugar
- 1/2 teaspoon salt
- Sesame oil, to taste
- Cooking oil, for frying
Instructions:

Prepare the Water Spinach:
Heat a small amount of cooking oil in a pan over medium heat. Sauté two-thirds of the chopped garlic until fragrant and translucent. Add the sliced chilies, sugar, salt, and a splash of sesame oil. Stir to combine and balance the flavors. -
Cook the Water Spinach:
Add the chopped water spinach to the pan. Sauté for 2-3 minutes, or until the spinach is wilted. Once cooked, transfer the spinach to a serving plate. -
Prepare the Sardines:
In the same pan, add a bit more oil if needed and sauté the remaining garlic until fragrant. Add the sardines and a drizzle of sesame oil. Adjust the seasoning to taste. Gently mix in the fried eggs and cook for a short time, allowing the flavors to meld. -
Assemble the Dish:
Spoon the sardine and egg mixture over the sautéed water spinach. Serve immediately.
