5 Beat at low speed for 30 seconds, scraping the bowl constantly; then beat for an additional 3 minutes at high speed.
6 By hand, stir in the shredded Monterey Jack cheese and enough of the remaining flour to make a soft dough.
7 Turn out the dough onto a lightly floured surface and knead until smooth and elastic.
8 Place the dough in a lightly greased bowl, turning it once to coat it with grease.
9 Cover the bowl and let the dough rise until it doubles in size, which usually takes about 1-1/2 hours. 1-1/2 hr
10 After the dough has doubled in size, punch it down, cover it, and let it rest for 10 minutes. 10 min
11 Shape the dough into an 8-inch round loaf.
12 Place the shaped dough in a greased 9-inch pie plate, cover it, and let it rise in a warm place until it doubles in size again, about 40 minutes. 40 min
