Description: Serve this hearty soup with French bread or toasted bread to soak up every yummy drop. Very good on a winter evening, easy to make, and the recipe can be doubled. Note: Fresh spinach can be used in place of the cabbage. Add it with the beans, zucchini & pasta.

3/4 Onion
1/2 Celery
1/2 Carrot
1/2 Cabbage
2 Chicken Broth
2 Tomatoes
2 Tomato Paste
1/4 Garlic Powder
1 Basil
1 Dried Basil
4 1/2 White Kidney Beans
1 Great Northern Beans
1/2 Zucchini
NA Spaghetti
1/2 Elbow Macaroni
Salt
Parmesan Cheese

Instructions:

  1. In a heavy pot over medium heat, melt the margarine or butter.

  2. Add onions, celery, and carrots, and sauté for a few minutes until they start to soften.

  4. Bring the mixture to a boil, then reduce the heat and let it simmer, covered, for about 20 minutes.
