Recipe: Salentine-Style Savoy Cabbage (Verza alla Salentina)
Category: Side Dishes
Serves: 4

Ingredients

Ingredient Quantity
Savoy Cabbage (Verza) 500g
Cherry Tomatoes (Pomodorini ciliegino) 8
Fresh Chili Pepper (Peperoncino fresco) 1
Red Onion (Cipolla rossa) 100g
Water (Acqua) 300g
Extra Virgin Olive Oil (Olio extravergine d’oliva) 5 tbsp

Instructions

  1. Prepare the Cabbage: Begin by removing the tougher outer leaves of the savoy cabbage. Cut it in half, then slice it into thin strips. Rinse the cabbage thoroughly under running water to remove any dirt.

  2. Slice the Onion and Tomatoes: Peel and thinly slice the red onion. Wash the cherry tomatoes and cut them in half.

  3. Chop the Chili: Slice the fresh chili pepper into thin rounds, removing seeds if you prefer a milder heat.

  4. Sauté the Onion: Heat 5 tablespoons of extra virgin olive oil in a large skillet over medium heat. Add the sliced onion and sauté it for about 2 minutes, or until it softens and becomes translucent.

  5. Add the Tomatoes and Cabbage: Add the halved cherry tomatoes and the prepared cabbage to the skillet. Season with salt to taste.

  6. Cook the Dish: Pour in 300g of water and stir everything together. Cover the pan with a lid and let it simmer for 30 minutes, stirring occasionally.

  7. Serve: Once the cabbage is tender and the flavors are well combined, remove from heat. Serve hot as a delicious side dish.
