Ingredients:

  • 1 teaspoon salt
  • 2/3 teaspoon fresh ground pepper
  • A pinch of nutmeg
  • 1 cup scallops
  • A handful of spinach leaves
  • 1 tablespoon unsalted butter
  • 3 large shrimp
  • 1/2 cup chopped green onions
  • 1/2 cup fresh parsley
  • 1/4 teaspoon Dijon mustard
  • 4 tablespoons lemon juice
  • 2 teaspoons mixed herbs

For the Terrine:

  1. Place the fish in the bowl of a blender or food processor and process until smooth and shiny.
  2. Add half of the cream and season with salt, pepper, and nutmeg. Process briefly and transfer the mixture to a bowl.
  3. Repeat the process with the scallops and the remaining cream, then transfer the mixture to a second bowl.
  4. Beat the egg whites until they hold soft peaks.
  5. Fold half of the egg whites into the fish mixture and the other half into the scallop mixture.
  6. Wash and blanch the spinach leaves, then drain well and puree in a blender or food processor.
  7. Add 2 tablespoons of the scallop mixture and 2 tablespoons of the fish mixture to the spinach puree and set aside.
  8. Melt the butter in a frying pan and cook the shrimp until just colored and firm.
  9. Add the green onions, then remove the pan from the heat. Once cooled, add it and the parsley to the spinach mixture and process until well combined.
  10. Oil a 9 x 5 inch loaf pan and spread the scallop mixture on the base, followed by the spinach mixture, and finally, the fish mixture.
  11. Cover the pan with foil and place it in a baking dish partly filled with hot water.
  12. Bake in a preheated 350°F oven for 1 hour or until set.
  13. Allow the terrine to cool, then chill overnight before unmolding onto a plate.

For the Herb Mayonnaise:

  1. In a blender or food processor, combine the egg yolks, 1 teaspoon salt, pepper, mustard, and lemon juice. Process until mixed.
  2. With the motor still running, slowly add the oil in a thin, steady stream until emulsified.
  3. Add chopped herbs and spinach, then taste for seasoning and adjust if needed.
