Danish-French Bread (Franskbrod) Recipe 🥖

Instructions:

  1. In a large mixer bowl, combine 3 cups of flour and the active dry yeast.

  2. Heat 2 1/2 cups of water, sugar, salt, and shortening until warm (approximately 115-120 degrees F), stirring constantly to melt the shortening.

  3. Add the warm mixture to the dry ingredients. Beat at low speed with a mixer for half a minute, scraping the bowl as needed.

  4. Increase the mixer speed to high and beat for 3 minutes.

  5. By hand, stir in enough of the remaining flour to make a soft dough.

  6. Knead the dough on a floured surface until smooth, approximately 10 to 12 minutes. Shape it into a ball.

  7. Place the dough in a greased bowl, turning it once to coat it. Cover and let it rise until it doubles in size, approximately 1 to 1 1/2 hours.

  8. Once risen, punch down the dough and divide it in half. Cover and let it rest for 10 minutes.

  9. Roll each half of the dough into a 15 x 12-inch rectangle.

  10. Roll up each rectangle tightly from the long side, ensuring a secure seal. Taper the ends.

  11. Place each rolled loaf diagonally, seam side down, on a greased baking sheet sprinkled with cornmeal.

  12. Gash the tops of the loaves diagonally every 2 1/2 inches, making cuts approximately 1/8 inch deep.

  13. In a small bowl, beat the egg white until foamy, then add 1 tablespoon of water.

  14. Brush the tops and sides of the loaves with the egg white mixture, then sprinkle with poppy seeds.

  15. Cover the loaves and let them rise until doubled in size, approximately 1 hour.

  16. Preheat the oven to 375 degrees F.

  17. Bake the loaves until they are light brown, approximately 20 minutes.

  18. Brush the loaves again with the egg white mixture and bake for an additional 20 minutes, or until they are golden brown and sound hollow when tapped on the bottom.

  19. Remove the loaves from the baking sheets and allow them to cool before slicing.
