Ingredients

  • 4 cups milk
  • 4 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 4 tablespoons sugar
  • 1 tablespoon lard or butter

Instructions

  1. In a large bowl, combine the flour, sugar, and salt.
  2. Put the milk and lard in a pan and heat it to the scalding point.
  3. Once it begins to bubble, pour all the milk over the flour mixture.
  4. Keep stirring until all the flour has been mixed into the milk.
  5. Let the mixture cool.
  6. Pinch off walnut-sized portions of the dough and roll them out thinly, about the size of a dinner plate.
  7. Bake the lefse on a lefse iron or large griddle.
  8. Watch carefully to avoid burning; it only takes a minute for this step.
  9. When you see the lefse start to bubble and turn a light brown, flip them and bake the other side.
  10. Lay the baked lefse on top of waxed paper and keep stacking them up, placing another piece of waxed paper on top to prevent them from drying out.
  11. Store the lefse in an airtight container or freeze them.
  12. Before serving, lightly butter the lefse, sprinkle with sugar, roll them up, and enjoy!
  13. If the lefse become too stiff, place them between damp dish towels for about 15 minutes to soften before serving.
