Ingredients:

450g Caster sugar
225g Bottled water
1 Cream of tartar
Vanilla flavoring
Powdered instant coffee

Instructions:

  1. Prepare the Sugar Mixture:

    • In a large pan, combine the caster sugar and bottled water.
    • Place the pan over very low heat, allowing the sugar to dissolve completely.
  2. Stir Constantly:

    • Using a spatula, constantly stir the sugar mixture.
    • Draw the spatula gently from side to side across the base of the pan to prevent the sugar from settling at the bottom.
  3. Add Cream of Tartar and Boil:

    • Once the sugar is fully dissolved, immediately add the cream of tartar.
    • Cover the pan and bring the mixture to a boil.
  4. Skim and Boil:

    • When the mixture boils, remove the lid and skim off any impurities that rise to the surface.
  5. Boil to Desired Temperature:

    • Continue boiling the mixture until it reaches 126ยฐC (259ยฐF) on a candy thermometer.
  6. Pour and Cool:

    • Pour the hot syrup onto an oiled slab, preferably marble or a smooth, non-porous stone surface.
    • Allow it to cool slightly, then turn the edges towards the center using an oiled scraper.
  7. Add Flavoring:

    • As soon as the syrup is cool enough to touch, add your chosen flavoring and coloring to the center.
    • Continue turning the edges towards the middle to incorporate the flavoring evenly.
  8. Pull the Candy:

    • Transfer the mixture to an oiled candy hook and pull it quickly and evenly until it becomes cloudy and dull.
  9. Adjust Consistency if Needed:

    • If the candy becomes very stiff during pulling, reheat it slightly to maintain the desired consistency.
  10. Shape and Cut:

    • Draw out the candy evenly and snip it into lengths using a pair of oiled scissors.
  11. Allow to Set:

    • Leave the shaped candy in a warm kitchen for approximately 24 hours. During this time, it will develop a sugary texture.
  12. Storage:

    • Once set, transfer the Edinburgh Rock into a paper-lined airtight tin for storage.
