Ingredients:

1 tablespoon margarine
1/2 onion, diced
2 mushrooms, sliced
1/2 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
1/2 teaspoon salt

3 cups milk
2 cups shredded Swiss cheese
2 tablespoons half-and-half
2 eggs
1/2 cup water

For the crepes:

  • 1 cup all-purpose flour
  • 1 1/2 cups milk
  • 2 eggs
  • 1/4 teaspoon salt
  • Cooking oil (for frying)

Instructions:

1. Make Crepes:

  • Combine all ingredients (except for cooking oil) for crepes in a bowl and blend with a whisk until smooth.
  • Cover the batter and set aside for 30 minutes.
  • Heat cooking oil in a pan.
  • Add 2 tablespoons of batter and cook until lightly browned on the bottom side (about 1 1/2 minutes).
  • Turn and cook the other side.
  • Repeat with the remaining batter.
  • Place crepes between pieces of waxed paper to keep them from sticking together.
  • Set aside.

2. Prepare Mornay Sauce:

  • Preheat oven to 375°F (190°C).
  • In a small saucepan, melt butter and blend in flour.
  • Stir in milk and cook, stirring constantly, until the sauce thickens.
  • Add shredded Swiss cheese and blend well.
  • In a separate bowl, beat eggs with half-and-half, then add this mixture to the sauce and blend well.
  • Season with salt and white pepper, then remove from heat.

3. Prepare Crepe Mixture:

  • Butter a large shallow baking dish.
  • In a skillet, melt 4 tablespoons of butter and sauté diced onions and sliced mushrooms until tender.
  • Stir in the seafood (crab and shrimp).
  • Add 3/4 cup of the prepared Mornay sauce, 1/4 cup grated Parmesan cheese, chopped parsley, salt, and white pepper.
  • Stir together until heated through.

4. Assemble Crepes:

  • Spoon 2 tablespoons of the seafood mixture into the middle of each crepe and roll up.
  • Place the crepes seam side down in the buttered baking dish.
  • Repeat with the remaining crepes.

5. Bake:

  • Top the assembled crepes with the remaining Mornay sauce and grated Parmesan cheese.
  • Bake in the preheated oven for 15 minutes or until the sauce is warm and bubbly.

6. Serve and Enjoy:

  • Once baked, remove the crepes from the oven and let them cool for a few minutes.
