Seared Tuna Steaks with Tahini Sauce and Hummus

Instructions

Begin by preparing the hummus: squeeze the lemon to extract the juice and set it aside. In a blender or food processor, combine the cooked chickpeas, tahini, 60g of lemon juice, fresh parsley, and smoked paprika. Blend until smooth and creamy. Season with salt and black pepper to taste. If the mixture is too thick, add a little water to reach your desired consistency. Once blended, set the hummus aside to rest while you prepare the tuna steaks.

For the tuna steaks, heat a pan over medium-high heat and add the 10g of olive oil. Season the tuna steaks with salt and pepper on both sides. When the oil is hot, add the tuna steaks to the pan. Sear the steaks for 2-4 minutes on each side, depending on the thickness of the filets and your preferred level of doneness. The tuna should be slightly browned on the outside but still tender and juicy inside.

Once the tuna steaks are cooked, remove them from the pan and let them rest for a moment. Meanwhile, prepare the tahini sauce. In a small bowl, mix 30g tahini with 30g of lemon juice, 50g of olive oil, and 15g of water. Add smoked paprika, and stir to combine into a smooth, creamy sauce. Season with salt and pepper to taste.

To serve, place the cooked tuna steaks on a plate and generously drizzle the tahini sauce over the top. Serve with a side of the homemade hummus and enjoy immediately.
