Fresh Tuna 200g
Black Sesame Seeds 40g
White Sesame Seeds 40g

Instructions

  1. Prepare the Watermelon and Tuna:
    Begin by slicing the watermelon into pieces approximately 3 cm thick. Remove the rind and cut the watermelon into 8 uniform cubes.
    Repeat this process with the tuna, ensuring you cut it into cubes of the same size as the watermelon. You should have 8 cubes of tuna as well.

  2. Assemble the Skewers:
    Take a wooden skewer and slide on one cube of watermelon, followed by one cube of tuna, and another cube of watermelon. Repeat this process to create a total of four skewers, always alternating between two pieces of watermelon and one piece of tuna in the middle.

  3. Coat the Skewers in Sesame:
    Gently roll the assembled skewers in a mixture of black sesame seeds and white sesame seeds, ensuring an even coating.

  4. Sear the Skewers:
    Heat a pan over high heat and add a small amount of extra virgin olive oil. Once the oil is hot, place the skewers in the pan and sear on all sides for a maximum of 5 minutes. The goal is to get a nice golden-brown crust on the tuna while keeping the inside tender.

  5. Prepare the Sauce:
    In the same pan, pour in the soy sauce and teriyaki sauce. Let the sauce simmer over low heat for a few minutes, allowing it to thicken slightly.

  6. Serve:
    Once the skewers are seared and the sauce has reduced, place a spoonful of the sauce on the serving plate. Arrange the skewers on top, and season them with a pinch of sea salt.
