Ingredients:

  • 1 cup boiling water
  • 3/4 cup dried shiitake mushrooms
  • 10 ounces lo mein noodles
  • 2 eggs
  • 1 red bell pepper, thinly sliced

  • 1 tablespoon fresh ginger, grated
  • 1/2 teaspoon crushed red pepper flakes
  • 1 cup sugar snap peas
  • 1 cup snow peas
  • 2 tablespoons sesame oil
  • 1 teaspoon cooking oil
  • 1/8 teaspoon salt
  • Low-sodium soy sauce, for serving

Instructions:

Step Description
1 Place dried shiitake mushrooms in a small bowl and cover with boiling water. Let them stand for 20 minutes while you prepare other ingredients.
2 After 20 minutes, drain the mushrooms, reserving 1/2 cup of the liquid. Chop the mushrooms into bite-sized pieces.
3 Cook the lo mein noodles according to package instructions. Once cooked, toss them with 1 teaspoon of sesame oil and return them to the pan to keep warm.

6 In the same skillet, heat the remaining 1 teaspoon of cooking oil and 1 teaspoon of sesame oil over medium-high heat. Add the mushrooms, red bell pepper, minced garlic, grated ginger, crushed red pepper flakes, sugar snap peas, and snow peas. Cook and stir for 2-3 minutes until the vegetables are tender yet crisp.
7 Pour in the reserved mushroom liquid and teriyaki sauce. Bring the mixture to a low boil and let it cook for an additional 3-4 minutes, allowing the flavors to meld together.
8 Add the cooked noodles and egg strips to the skillet. Toss everything together until well combined. If desired, sprinkle with salt to taste.
