Til Ke Ladoo, also known as Sesame Ladoo, is a delicious and healthy Indian sweet, especially enjoyed during the winter, particularly during the Sankranthi festival in Maharashtra. The combination of sesame seeds (til) and jaggery provides warmth and energy, making this a perfect treat for the cold season.

Ingredients

  • 2 cups Sesame seeds (Til seeds)
  • 120 grams Jaggery (broken into pieces)
  • 1 tablespoon Ghee
  • 1/2 teaspoon Cardamom Powder (Elaichi)
  • Water (as required)

Instructions

  1. Roast the Sesame Seeds:
    Begin by dry roasting the sesame seeds (til) in a skillet over medium heat for about 2 minutes, or until they turn lightly brown. Once roasted, remove them from the skillet and transfer them to a bowl to cool.

  2. Prepare the Jaggery Syrup:
    In a heavy-bottomed cooking pot, add water and jaggery pieces. Stir well to melt the jaggery completely over low-medium heat.

  3. Check the Consistency:
    Allow the jaggery mixture to cool until it thickens. You can test its consistency by dropping a bit of the syrup into cold water. If it forms a small ball or hardens without dissolving back into the water, it is ready for the next step.

  4. Combine with Sesame and Spices:
    Once the jaggery reaches the correct consistency, add ghee, cardamom powder, and the roasted sesame seeds to the mixture. Stir well and switch off the flame.

  5. Shape the Ladoos:
    Grease a plate with a little ghee and transfer the mixture onto the plate, allowing it to cool for about 2 minutes. Be sure to shape the ladoos while the mixture is still warm, as it will harden as it cools. Grease your palms with ghee, take a small portion of the mixture (about the size of half a golf ball), and shape it into a ladoo. Repeat the process until all ladoos are shaped.

  6. Cool and Store:
    Let the ladoos cool completely. Once cooled, store them in an airtight container for longer freshness.

Serving Suggestions
Til Ke Ladoo can be enjoyed as a snack or dessert, especially during festivals. Serve them alongside other treats like Baked Masala Namak Para or Aloo Dal Pakoras for a delightful festival spread.
