Tahu and Vegetable Stir-Fry
Ingredients:
- 1 block firm tofu, cut into cubes
- 1 tablespoon vegetable oil (for frying)
- 1 tablespoon sesame oil
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar
- 2 tablespoons sugar, honey, or agave syrup
- 2 tablespoons cornstarch, dissolved in water
- Sesame seeds, for garnish
Instructions:
-
Fry the Tofu: Heat the vegetable oil and sesame oil in a pan over medium heat. Add the tofu cubes and fry until golden and crispy on all sides. Once done, remove the tofu from the pan and set it aside.
-
Steam the Broccoli: In the same pan, add the broccoli florets and 3 tablespoons of vegetable broth. Steam the broccoli for about 5 minutes, or until tender yet crisp. Remove the broccoli from the pan and set it aside with the tofu.
-
Prepare the Sauce: In the same pan, add a little more sesame oil if needed, then sauté the minced garlic and ginger for about 2 minutes, until fragrant. Stir in the soy sauce, rice vinegar, and sugar (or honey/agave syrup). Mix well.
-
Thicken the Sauce: Stir in the cornstarch mixture and cook until the sauce thickens, about 1-2 minutes. Add the sesame seeds and return the fried tofu to the pan.
-
Combine and Serve: Gently toss everything together until the tofu and broccoli are well coated with the sauce. Serve hot over steamed rice.
