Tahu and Vegetable Stir-Fry

Ingredients:

  • 1 block firm tofu, cut into cubes
  • 1 tablespoon vegetable oil (for frying)
  • 1 tablespoon sesame oil
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons sugar, honey, or agave syrup
  • 2 tablespoons cornstarch, dissolved in water
  • Sesame seeds, for garnish

Instructions:

  1. Fry the Tofu: Heat the vegetable oil and sesame oil in a pan over medium heat. Add the tofu cubes and fry until golden and crispy on all sides. Once done, remove the tofu from the pan and set it aside.

  2. Steam the Broccoli: In the same pan, add the broccoli florets and 3 tablespoons of vegetable broth. Steam the broccoli for about 5 minutes, or until tender yet crisp. Remove the broccoli from the pan and set it aside with the tofu.

  3. Prepare the Sauce: In the same pan, add a little more sesame oil if needed, then sauté the minced garlic and ginger for about 2 minutes, until fragrant. Stir in the soy sauce, rice vinegar, and sugar (or honey/agave syrup). Mix well.

  4. Thicken the Sauce: Stir in the cornstarch mixture and cook until the sauce thickens, about 1-2 minutes. Add the sesame seeds and return the fried tofu to the pan.

  5. Combine and Serve: Gently toss everything together until the tofu and broccoli are well coated with the sauce. Serve hot over steamed rice.
