Step 1: Preparing the Kala Chana

Start by soaking the kala chana (brown chickpeas) in water for 6 to 8 hours. After soaking, pressure cook the chana until soft. Step 2: Preparing the Spiced Mixture

Once the chana is cooked and softened, set it aside to cool. While the chana is cooling, prepare the other ingredients. Step 4: Stuffing the Kebabs

Divide the kebab mixture into equal portions, roughly the size of a lemon. Take each portion and flatten it gently in the palm of your hand. Spoon a teaspoon of hung curd (Greek yogurt) into the center of each flattened portion. Carefully fold the edges around the yogurt to seal the filling inside the kebab. Gently flatten the stuffed kebab to form a round or oval shape. Repeat this process with the remaining mixture to form all the kebabs.

Step 5: Cooking the Kebabs

Heat a pan over medium heat and grease it lightly with oil. Once the pan is hot, place the Shikampuri Kebabs on it. Drizzle a little oil over the kebabs and cook them on medium heat.
