Also known as stuffed eggs or angel eggs, this recipe adds a savory seafood touch that’s perfect for any festive occasion.
Ingredients:
- 4 whole eggs (hard-boiled, peeled, and halved)
- 4 spring onions (bulb & greens, finely chopped)
- 10 shrimp (peeled and deveined)
- 2 tablespoons classic mayonnaise (with egg)
- 2 tablespoons English mustard sauce
- 1 teaspoon black pepper powder
- 1 teaspoon garlic powder
- Spring onion greens (few, for garnish)
- Salt, to taste
Preparation Time: 10 minutes
Cooking Time: 35 minutes
Servings: 4
Instructions:
- In a skillet, melt butter over medium heat. Add chopped spring onion whites and sauté for 2 minutes until they turn pinkish.
- Add shrimp to the skillet, tossing until they are fully cooked. Sprinkle with garlic powder, and continue tossing. Let the shrimp mixture cool down for about 10 minutes.
- Once cooled, mince the shrimp or chop into very small pieces.
- Meanwhile, scoop out the yolks from the hard-boiled eggs and place them in a mixing bowl. Mash the yolks with a fork until smooth.
- Add mayonnaise, mustard sauce, garlic powder, black pepper powder, and salt to the mashed yolks. Mix thoroughly until combined.
- Add the shrimp and onion mixture to the yolk mixture, stirring to combine. Keep a few shrimp pieces aside for garnishing.
- Transfer the egg yolk and shrimp mixture into a piping bag or a plastic bag with the corner cut off. Carefully pipe the filling into the hollowed-out egg whites.
- Garnish the deviled eggs with the reserved shrimp pieces and a sprinkle of spring onion greens.
- These Shrimp Deviled Eggs can be served cold as an appetizer or starter. They pair perfectly with dishes like Pizza Margherita for a festive card party.
